ポイントは、「お湯の量」「お湯の温度」「茹で時間」の3つです。

①お湯の量は、ラーメン一食分(140g)につき1リットル、最低でも600ccのお湯。目安は家庭用中鍋で八分目です。 2食分以上を一度にゆでる時は必ず大鍋で、8分目の湯量がおすすめです。見た目での適切な湯量は、入れた麺が沸騰したお湯で泳ぐように見えるのが目安です。じゃがラーメンの作り方その1

 

②お湯は茹でる前に必ず沸騰状態にしてください。そして麺をよくほぐしていれます。麺を入れてから再沸騰の時間が短いほど美味しく茹で上がります。ゆで時間は平均2~2分半が目安です。

③市販のスープをあらかじめ温めた丼にお好みの量のお湯でよく溶いて用意します。

④茹で上げ後は十分に湯切りをし、お好みの具材を乗せてお召し上がり下さい。

じゃがラーメンはこしの強さ、麺に冷たいラーメンはいかがでしょうか?ざるラーメンやサラダ風ラーメンとして、新鮮な野菜と一緒にゴマタレで召し上がってみて下さい。ゆで時間は沸騰してから、お好みで4分です。茹で上げ後は、冷たい水で、ぬめりをとるように、麺を洗うのが、ポイントです。

How to Make Delicious Jaga Ramen

The three points to remember are the amount of water to use, the water temperature, and the cooking time.

1) For best results you should use one liter of water for each single (140gr) serving of noodles. The minimum we recommend is 600cc of water per serving. If using a Wok, reduce the water amount by 20%. For making more than two servings at a time, we strongly recommend using a large pot and not less than 800cc of water per serving. A good rule of thumb is that when you place the noodles in the rapidly boiling water, they should move freely, as if they were swimming in the pot.

2) Allow the water to come to a full boil before untangling the noodles and putting them into the pot. Noodles cook quickly, and undercooking is always better than overcooking. We recommend 2 or 2 /12 minutes as a guideline.

3) Warm a deep bowl with hot water, and then add the contents of the soup packet along with hot water to taste. Make the soup as strong or as thin as you like.

4) Drain the cooking water from the noodles and gently add them to the hot soup. Include your choice of meat or vegetable toppings and enjoy a taste of Hokkaido.

FOR TSUKEMEN OR COLD NOODLES:

One characteristic jaga ramen is quickly becoming known for is its slightly chewy “bite”. On a hot summer’s day a cool plate of these slightly al dente noodles makes great snack or light meal. They’re excellent as zaru ramen (cold noodles eaten with a light dipping sauce), or as the base of a salad with fresh summer greens. One or the simplest and most delicious ways to eat them is just to top the cold noodles with a bit of sesame dressing.

Noodles served in a hot soup continue to cook slightly in the broth, but for cold noodles we recommend boiling them for about 4 minutes. Then immediately chill the noodles in cold water to stop the cooking process. For the best flavor for your cold noodles, wash them thoroughly in the cold water to remove any excess starchiness brought out by the longer cooking time.
